Day 3! So I'm catching a cold. :( This is not how I wanted to start my first week of my Whole 60. I also realized that I have to cut out a vitamin supplement because it is not squeaky clean and so I'm going to add on another week to my Whole 60 to make up for these setbacks. I sure hope I get to feeling better soon. I have done great food wise though. It is starting to feel natural just loading up my plate with lots and lots of veggies.

Day 2!!! Feeling much better than yesterday after all my digestion upset...... Thank goodness!!! So far so good today! Had a great omelet with coconut milk and lots of veggies for breakfast with a handful of fresh red raspberries. For lunch it will be baked salmon with rosemary and chopped pecans on top and some broccoli and brussel sprouts. Snacks- olives, shredded coconut, and an apple. Oh yes and water, water, water....did I mention water? :)
Edit: Dinner was spaghetti squash with a grass fed ground beef and tomato sauce. Salad with mache lettuce and kale and a homemade dressing of olive oil, lemon juice, lemon peel, and basalmic vinegar. Yum!

Day 1:
Today is day one on my Whole 60 challenge!! This isn’t about testing my will power but is a quest to feel better and an attempt to get some relief from my stomach ailments. So far it is fairly easy but I realize the days are going to get tougher and its going to take determination to stick with it. I am determined to give myself the opportunity to feel better and can’t undermine my health by giving into junk food. The holidays will bring challenges but it boils down to feeling good or feeling bad. I choose to fight to feel better and get out of this viscous cycle.
First on my agenda, well besides planning my weeks in advance and stocking up on plenty of fresh awesome food is to start planning my Thanksgiving day plan. I will probably have at least 2 or 3 meals at separate houses to deal with so I better get busy planning. My game plan is to go ahead and buy my own (very small) turkey to bake myself. I need to know that it hasn’t been fried in any unsafe oils or baked with terrible things added to it. If I have to then I will bake it at home and ration it off in containers for each meal. Then I will make myself one of my favorite vegetables to go with it and some mashed cauliflower and garlic. For my Whole 9 approved treat, I will have a sweet potato mash with some cinnamon and coconut milk. I will take some tea and coffee for me to sip on instead of all the sugary drinks that will be readily available. I will also take along a cooler of all my approved snacks and foods that I will need for all the other meals of the day. Speaking of which, I need to plan those out…..
Also, coconut cream lara bars really are natures crack. I used to HATE coconut and now I’m practically dreaming about it. I think I am only allowed to buy those one at a time and for emergencies like when I am starving in class and want to strangle someone for food. Clearly, that is an emergency. Hehe
The first half on my journey will take me to November 30, 2010 and my second half will take me to December 30, 2010 at which I will hopefully be able to pull myself off some medications and maybe start feeling really good. (fingers crossed!) I am hoping that by the time I finish the 30 days that I will start feeling better and by the time I hit 60 that I will feel awesome! I guess it is going to be a little easier for me than for most people because so many foods are already on my no-tolerate list anyways. For once being lactose intolerant (more like milk allergy) is going to have its advantage!!! Yes, finally!!! People always ask me how I do it and it like a no brainer to me. If you get severely physically ill just minutes after consuming a milk based product, then why would you even go there?? This isn’t just an upset tummy, this is like wishing you could die from the pain. CrossFit is my only form of self-punishment, okay??? I think bread was easier to give up then oats. It was all a very mental thing with the oats and the whole soluble fiber deal. I’m done with being miserable though so bring on the meat and veggies!!!! Now that I have a new found passion for eggs it is all good! J And yes, I put coconut milk in my omelet this morning and it was darn good and darn good for me!!! No more worrying about cooking with “no calorie cooking spray” and all that diet bs that is shoved in your face every five minutes. You know we didn’t have diet foods back in the day and we didn’t have nearly as many obese people as we have now. Just saying….. My mantra for this 60 days, No More Fake Food!!!
